Bakery Courses

We now offer a range of bread making and business courses. Aimed at the absolute beginner who wants a gentle introduction to making bread, to those who are seriously considering having their own bakery and who require a master class in all aspects of baking and business startup, these classes are an inexpensive but intensive way of learning the art. We can even design a course around your own needs.

All courses are from 10.00am – 4.30pm although they may run on depending on the course content and with the agreement of the participants. The price includes all meals, drinks and refreshments, a bag of goodies including some of Caroline’s recipes, a bag of organic flour and a measure of sourdough starter to get you going, a complimentary apron and whatever else we can add.

For Individuals – Max Three People

A one-day introductory course to bread making either for yourself or for others. Learn the general principals of bread making, leavened and unleavened bread, natural and prepared yeasts, using a variety of equipment, techniques and methods to produce your very own loaf.

A two-day course in bread making that extends the knowledge from the earlier course to include more detail in the different techniques, making different varieties and shapes and moving from domestic to commercial equipment. The course also includes an introduction to Health and safety, Environmental Health and Food Safety Standards and this concludes with a City & Guilds approved Level 2 Food Safety and Hygiene web based course and certificate.

For Couples – Max Two Couples

A one, or two day course to learn the fundamentals of bread making, production and selling. This course builds on the individual course by developing the ethos of working together both in terms of making bread but also learning and developing roles in both production and then point of sale. This can include an introduction to relevant law, regulations on labeling, point of sale information, basic selling techniques and cash reconciliation.

For Families – Max Two Families

A one-day course for two adults and up to two children. Learn about making your own bread with the whole family. We want to make the activity interesting and fun but also combine some of the general principles of bread making, leavened and unleavened bread, explaining the role of each ingredient and by using a variety of hands on techniques and methods enable each family member to produce their very own individual loaf.

Starting your own business – Max Four People

For those who are looking to start their own business we offer a range of one- day business modules that compliment any of the above courses that can follow on or indeed are separate from the baking days. These modules deal with each aspect of running a business and are specifically designed to cover each of the four key areas within a start up business. Although specific to a bakery, much of the information is common to any small food manufacturing business.

Business Management

A one day introduction to most aspects of setting up and running a small bakery or food business. The day starts with a coffee to get you in the mood and then it is a rollercoaster ride through all of the legislation that affects an SME. These include health & safety, food safety, HACCP, risk and fire risk assessments, protective clothing, an introduction to employment law, labeling and packaging, storage and distribution, facility design and planning issues.

Finance

A one day introduction to most aspects of business finance. This includes an applied example of business software, general ledgers, VAT, bank accounts, profit and loss, corporation tax, salaries and wages, setting up budgets, organising accounts, employee pay and remuneration, cash handling and reconciliation, ordering and invoicing and an introduction to external funding, grants and other finance arrangements.

Marketing and Point of Sale

A full day discussing all aspects of selling within a small business environment. This includes web design, web information, on line sales, point of sale display, design and marketing, printing, sales techniques, staff training, uniform and dress, loyalty schemes, how to sell and innovative sales techniques.

Employment

A one day introduction to most aspects of employing people in a small business. Covering employment law, recruitment and retention, contract of employment, work-life policies, minimum wage, legislation, maternity leave, shift working, unsocial hours, disciplinary procedures, appraisals, roles and responsibilities and others. A must for anyone looking to employ full, part time or casual staff
